Championship Bean Dip

Doubles easily to make a larger batch!

Championship Bean Dip

TOTAL TIME: Prep: 10 min. Cook: 2 hours

YIELD: 4-1/2 cups.


Ingredients

1 can (16 ounces) vegetarian refried beans 
1 cup picante sauce
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
3/4 cup sour cream
3 ounces cream cheese, softened
1 tablespoon chili powder
1/4 teaspoon ground cumin
Tortilla chips and salsa

Directions

1. In a large bowl, combine the first 8 ingredients; transfer to a 1-1/2-qt. slow cooker. Cover and cook on high for 2 hours or until heated through, stirring once or twice. Serve with tortilla chips and salsa.

Bacon-wrapped Baked Apples

INGREDIENTS

1 package thick-cut bacon
3 Granny Smith apples (or whatever - you're wrapping it in bacon!)
1/4 c. lemon juice
1/4 c. brown sugar (and/or cinnamon & sugar)

DIRECTIONS

Preheat oven to 425°.

Cut bacon in half, so each strip is half as long, and set aside.

Cut apples into wedges (about 8 per apple), and dip in lemon juice to keep them from browning.

Wrap each apple slice with a piece of bacon and place it on a parchment-lined baking sheet with the edge or seam of the bacon facing down.
Sprinkle with brown sugar and bake for 15 to 18 minutes, or until bacon is no longer translucent. Flip the apples halfway through cooking so the bacon cooks evenly, and serve warm.

Texas Caviar

This is one from Mama Sue. It's a great side-salad, but sometimes we also eat it with chips.

Ingredients:
1 lg green, yellow, and red pepper
1 med red onion
1 can drained
black beans
black-eye peas
chick peas
yellow corn
white corn

Dressing:
1/2 c. cider vinegar
1/2 oil
3/4 c. sugar

Directions:
The day of serving, combine all ingredients.
Beware of mixing too early as the peppers give off a lot of water.
