Pork Carnitas

This came from my cousin Erin.
I've made this recipe in both small and large portions. When making the large portion, I added extra jars of salsa and cans of Rotel.

Ingredients:
2-3.5 lbs pork loin
1 jar salsa verde
1 can Rotel
1 sliced onion

Directions:
Place pork in slow cooker.
Pour salsa, Rotel, and sliced onions on top.
Cook for 8-10 hours on low.
Remove meat and shred.
Pour desired amount of sauce over top of meat and eat with rice and beans, in tacos, or over chips.
Top with cheese, sour cream, avocado, chopped tomato, etc.
