Texas Caviar

This is one from Mama Sue. It's a great side-salad, but sometimes we also eat it with chips.

Ingredients:
1 lg green, yellow, and red pepper
1 med red onion
1 can drained
black beans
black-eye peas
chick peas
yellow corn
white corn

Dressing:
1/2 c. cider vinegar
1/2 oil
3/4 c. sugar

Directions:
The day of serving, combine all ingredients.
Beware of mixing too early as the peppers give off a lot of water.
