Baked Oatmeal

The Mennonite classic, passed to me from my mama-in-law.

Baked Oatmeal!

Ingredients:

1/2 cup oil or butter
2 eggs
2 tsp baking powder
1 cup milk
1 cup sugar
3 cups oatmeal (whole or quick)
1 tsp salt

Directions:

1) Mix oil, sugar, and eggs.

2) Add remaining ingredients.

3) Pour mixture into greased 8x8" pan.
Bake at 350 for 30 minutes.

Serve hot with milk or yogurt.
Fruit, raisins, cinnamon, apples, nuts, berries, peaches, etc can be added before baking.

6/10/19 - After mixing most of the ingredients today, I realized I only had 2 cups of oats. So I substituted a cup of AP flour for the missing cup of oatmeal.  To my delight, it worked! The result was a more bread-like pan of baked oatmeal. Still quite yummy, and good (as usual) in a bowl of milk, or now sliced with a pat of butter melting over it.

YES! I'm so glad you posted this! I wanted to make this a couple of weeks ago, but I'd accidentally deleted the email that you'd sent last fall. I had to settle for an internet recipe, which was good, granted, but not AS good. Butter makes all the difference.
